Besan Barfi
Ingredients:1/3 cup sugar, water half the amount of sugar, 1 cup besan, 1/3 cup chopped almond, 1/2 cup ghee, 6 green cardamoms, few stands of saffron, Nuts for garnishMethod: Grease the plate with ghee and set a side. sieve the besanIn the thick bottom pan add besan and ghee stir at low heat for 30-40 minutes till the ghee starts to separates. roast the besan until its light brown.Boil sugar and water until syrup is thick and 1 wire consistency.Add almonds to the besan and roast for 10 minutes. remove from heat and add sugar syrup ans mix till well combines.quickly pour over greased pan about 1/4 inches thick.
smooth the top with back of spoon and sprinkle nuts.
let it cool. than cut diamond squares.
